Kozaemon junmai ginjo hiyaoroshi “Kozaemon” (miyama nishiki) - Pasturised only once and traditionally made in summer and released in autumn. Aftertaste is bitter and it’s quite dry on the tongue. More astringent than I’m used to from Kozaemon. Very low intensity nose, if fairly fruity. It does have a fairly lively texture, if not nearly as much as their namazake. It has fruity flavours, but I’m distracted by the bitterness of the aftertaste. I think the flavours are much better appreciated at room temperature.
Edit January 9th 2021: New bottle at room temperature gives has a much better nose, very recogniseable ginjo style. Confirms that this hiyaoroshi is better drunk at 15C or up. Astringency is still present.
Kozaemon junmai ginjo bizenomachi namazake. Cotton candy and fruit. And spice. Surprising for a ginjo style- also my second time trying sake made with omachi rice.
Kozaemon junmai ginjo bizen omachi “Nakashima Jozo” - First time trying an omachi sake, great fresh nose and a hit of spice at the end.
Kozaemon shinanomiyamanishiki jikagumi - Another delightful namazake from Kozaemon. Lovely texture from the carbon dioxide, and a very fruity nose- lots of lychee with strawberry. It tastes light and fruity, definitely more lychee again. The 17% alcohol, miyamanishiki rice and nama bubbles give this a nice body. Highly recommended.
Kozaemon miyama nishiki namazake “Kozaemon”. Surprisingly rich for a junmai ginjo- a lot of fruit in the nose and in the mouth. It’s light and ginjo style, but it has an almost chewy texture. It’s has a lovely melon-sweet and honey aftertaste. Not quite my favourite, but certainly very delicious. Not buttery like a good Chablis, but close in sweetness and a surprising body to it.
Kozaemon yuzu sake (junmai shu with yuzu juice) - A+++ tastes super fresh, like a refreshing boozy yuzu lemonade. Drink ice cold.
Kozaemon junmai ginjo bizen omachi “nakashima jozo” - A light and fruity nose, with some deeper banana notes. Strong fruit flavour for a ginjo style with a surprising amount of pepper. The 15,5% alcohol also gives this a more medium body. Fresh, but I think the omachi makes it surprisingly bold.
Kozaemon junmai ginjo bizenomachi namazake. Cotton candy nose, very clean fruity flavour. Surprising hint of pepper at the and a medium finish. The body is not very strong, but the flavours and aroma’s are fairly outspoken for a ginjo style.

甘めだけどしっかりしてる。
すーっと入って来る。今まで飲んだことの無い味わい。これは何だ?冷酒だと最初フルーティーでちょい甘だけど、あとあじが複雑!苦味?かな?ぬる燗だと甘味が増しすがやはり苦味(苦甘味)も増す。が常温(冷や)だとスルスル行ける味わいかな?常温から人肌燗くらいが良いかも! 5月16日、飲み慣れて来ると、やはり美味しい。星4つ!
